This is specific to the Open Sea mod and might be different in the Standard game.
The first storm you get caught in has no roll angle indicator and you can not capsize.
All other storms after that do have the roll angle indicator and the ship is damaged and can capsize.
When the storm ends there is a short intermezzo and then the next storm strikes. This continues until your ship sinks. My personal record is being sunk in the 7th storm.
The only way out is as soon as the first storm ends escape to the world map and then re-enter direct sail. Hopefully the storms will have passed and you can continue your journey.
