Where my red sails?

In the old build 12 you could chose from a few sail types and in the buildsettings there is data on it but I can't figure out how to select them in the game.

You're using the Post Build 12 mods now, aren't you? In the F2 > Ship screen, click on the sails button in the upper left part of the screen. If you do so, a button will appear at the buttom of the screen that will take you to the sail selection interface.
