How to make 1vs1 fight ships like the Black Pearl or Qunne Anne like this videos, and how do you fully fill your ship's HP and crew in Free Play?

That depends on which ship you want to play.

To use Queen Anne's Revenge, simply start a FreePlay as Blackbeard.

To use Black Pearl, either start as Barbossa (who by default will have the Cortes curse and will get the cursed version of the Black Pearl), or as Jack Sparrow. Or you can play the "Tales of a Sea Hawk" storyline to completion as that ends with you facing the Black Pearl, which you can capture. Or you could play "Hoist the Colours", which at various times will let you play all the versions of the Black Pearl - and you can keep most of them if you berth them before they're taken away. (On one occasion I ended the story with four of them - two Wicked Wench and two Black Pearl. )

You'll face the Mefisto at the end of the sidequest "Strange Things Going On in the Caribbean", though exactly which Mefisto you face will depend on your choice of period. In "Early Explorers" and "Spanish Main", it's the Satanist Fluyt of War. In "Golden Age of Piracy" and "Colonial Powers", it's the frigate seen in the first video. In "Revolutions" it's a variant of the "Kreyser" class frigate. And in "Napoleonic" it's the evil "Essex". You can also start the game with the Mefisto by beginning a FreePlay as Dark Teacher - again, you'll get the Mefisto which matches your chosen period.

You can also buy any of these ships. On Isla de Muerte is someone who will sell you any ship, including all these fantasy ships, for a price. So you need to raise a lot of money, and you need to find Isla de Muerte - there's someone sitting in the tavern on Tortuga who can help you with that...
