This is a intresting video showing the special effects that went into the scene where the Flying Dutchman and Black Pearl destroy the Endeavor, though its a bit unrealistic in the movie-Black pearl has 36 guns Flying Dutch. has 58guns it shows them both pounding the Endeavor and reloading thier guns too quickly to be realistic.

But apart from that, a submersible galleon crewed by undead human/seafood hybrids is entirely realistic.

Of course bloodythirsty seafood human creatures arent realistic, you dont see Bass growing legs and attacking me with a cutlasses and kalamari captaining a weird Ghost Galleon that pounds the daylight outta other vessels. You can only see that in POTC. Besides these seafood minions arent as intimidating as Elizbeth Swan in POTC 3 who liked to carry a grenade, a blunderbuss from her ...well look closely, I think 4 pistols from her torso, etc.
