I 've always wondered how I can change my Ships coloursheme or the sailssigns, as well as the sail material??

You should post this (and browse) the MODs forum.
What you can do in the vanilla game is to find a shipyward (it is on Bermuda island) where you can reinforce your ships - but this will not change the actual ingame view of the ships.

But there must be an available option on the interface, but there ins't! Instead I started servel games and got ons ship in different coloures, that strange!

There is no in-game way to change the ship's appearance. What you can do pretty easily is just swap the textures.
