The Sea Hawk quest is the one you want. It has the big main quest and many side quests scattered all around the archipelago. It also starts with a tutorial to help one get started on a good footing. Once you finish the tutorial you can go anywhere and do anything you can.
Indeed the original game's storyline has the most sidequests. Jack Sparrow has a few too. The others don't have much of anything.
On the original storyline, you can use the "Stormy Start" dialog to jump-start into a random "down and out" scenario that might be more interesting than the regular tutorial. -
