The man o' war and line ship may have more guns and crew than the frigate, but they're also slow and clumsy, as you've probably noticed when you try to turn. I like to use something a bit more agile for regular naval combat, but hit F2 and switch to the big battlewagon before going to attack a fort.

Unless you've already done this and changed keys, I think the defaults are that Block is Space, Parry is Shift.
Block means you hold the sword up in front of you. This has a reasonable chance of stopping basic thrust and slash attacks, although they can sometimes get through. It won't stop an all-out attack swipe, though. If you see him draw back his sword slowly, preparing for a mighty swipe, your only way to stop it is with a well-timed Parry.
It also improves your chances if you've gone up a few levels so you have more hit points.
