Well, I'm currently doing the Jack Sparrow quest...so... You can look in the Pa Wiki for the walkthrough to see what else you need to do- The curse Of The Black Pearl Quest, and many sidequests.

In the Sea Hawk main quest there is a side quest where you can talk to Davey Jones. It starts at Cayman.

If you have finished the Curse of the Black Pearl part of the main Jack Sparrow story. After that Davy Jones only appears in the "Lucas the Admirals Son & Justine Le Moigne side-quest. If you have not done this then go to Tortuga and talk to Thomas Tipman in the tavern.
