I'm not sure myself, but a simple test with a sword might give me the answer so i can post on here. The weapon damage min, max and block is self explanatory, piercing...hmm...

I believe it has something to do with breaking through a block, but I am not completely sure.

Thagarr is right; piercing is basically the chance of breaking through a block.
