When will I be able to choose what era I start in?

You have to complete the default era. Than you can choose another one.

You don't actually have to complete the default period, you just need to select a difficulty other than apprentice when you create your character. If you select journeyman or above, the period options are no longer greyed out.

Yeah. Apprentice is like a tutorial difficulty and pretty much holds your hand the entire time. About the only thing that's not super easy in that difficulty is dancing.
