what file changes the goods you get from the farm? Example, when i build a farm it says i get wheat & coffee. But, when i ask for the cash crop i get tobacco. I wanna change it so that i get coffee.

In PROGRAM\DIALOGS find the files starting with "b_" which are the BuildingSet dailog files.
