Could anyone explain, or link me to an explanation to how these effect the ships? Do they change when using realistic sailing? When comparing ships, is a higher or lower number better?

I searched for an answer here and on the modding wiki but could not find anything.
 
I'm no expert when it comes to ships but FAIK that determines with how much delay a ship reacts to rudder/sail changes and collisions. (e.g. how long it takes to stop after furling sail)
 
Yep, as CCC stated thats pretty much what the inertia setting SHOULD affect. As to how it actually works I've no clue currently as I've not changed any of those settings.
