IF there would be a ship with studding sail in-game, i think the studding sails should be assigned to full sail, not battle sails. if it's possible.

Yeah, I don't think it is possible.

From what I remember, the game only recognizes one sail per mast as "full sail"

That just means that no sail is set for "full sail".

I think this is always the case for triangular sails.
